I have yet to see bruised fruit displayed as a centerpiece in someone’s home. Yesterday my husband asked me if I was keeping rotten pears for a reason. They were not rotten, they were bruised. Bruised fruit is delicious fruit. Once I peeled them, the juicy flesh oozed between my fingers. Nothing ever went to waste in our home and to this day I cook and bake with the same eager frugality as my mother and grandmother.
Quite some time ago I had found a recipe in ‘Bon Appetit’ magazine for Apple Spiced Cake. It was time to make some substitutions and these pears would foot the bill.
