Spiced Apple Chutney

A jar of spiced apple chutney is perfect for the holiday's. Delicious with cold meats and cheeses.
Ingredients
3 medium yellow onions
3 pound granny smith apples
4 ounce golden raisins
4 ounce raisins
2 lemons freshly squeezed
1/2 teaspoon salt
1/2 teaspoon ground allspice
1 1/2 pound soft brown sugar
1 cinnamon stick
1 bay leaf
12 fluid ounce malt vinegar
1/2 teaspoon paprika
Instructions
Begin by preparing your jars. Sterilize them with boiling water.
Peel and core the apples. Chop them coarsely , careful not to chop them too small as they will be simmering for a while
Cut the lemons in half and squeeze them. Set juice aside.
Place all ingredients in a large saucepan or preserving pan and bring them to the boil.
Turn heat down to low and simmer for 1 hour.
Make sure to keep a close eye on this and stir occasionally, ensuring it doesn't burn or stick to the pan.
Remove bay leaf and cinnamon stick
Use a small pyrex glass jug or cone to pour into your prepared jars.
Allow to cool completely before sealing jars.
