Taste and savor the flavors of Ireland. Spend 2 nights in the historic town of Carlingford on the Cooley Peninsula, invaded by the vikings in the 9th Century. A visit to the oyster beds, tide permitting followed by a hands on cooking experience with oysters and mussels caught from Carlingord Lough.
Meet the chefs and food producers, hear their stories and learn about the provenance of the food. Dine with Lord and Lady Dunleath in their private dining room, tour the gardens and spend a night in their magnificent home, Ballywalter Park, Co Down. Spend 2 nights in Ashford Castle, Co Mayo. Tour Kylemore Abbey & Victorian Gardens, wander around the village of Cong, visit the buildings that still remain from the John Ford movie, 'The Quiet Man' with John Wayne and Maureen O'Hara. Forage for seaweed with Dr Prannie Rhatigan, author of 'The Irish Seaweed Kitchen' along the breathtaking beaches of Co Sligo. Our driver will return us all safely to Dublin on Sunday, April 29 where we will spend our last night before leaving Dublin for the USA on Monday, April 30.

Depart Carlingford for Ballywalter Park, Co Down
Stay at the historic Ballywalter Park and dine with Lord & Lady Dunleath in their elegant Dining Room.
Wednesday, April 25
Depart Co Down for MacNean House Restaurant & Cooking School in Blacklion, Co Cavan.
MacNean House is home to Irealnd's leading chef and tv personality, Neven Maguire, author of over 22 cookbooks, host of Neven's Food Trails on RTE and host of numerous other coooking shows on the Cooking Channel and RTE.
MacNean House bookings are a very special and rare treat as one can be waiitng fo rup to 2 years now for a reservation.

Thursday, April 26
Morning in the Cooking School with Neven Maguire. This is so much fun. You will all get your own cooking station and Neven will personally come around and work with you.
Afternoon, travel to Mount Falcon Estate, Co Sligo

Visit Kylemore Abbey
Dinner in the Evening in the historic George V Dining Room at Ashford Castle
'Ashford Castle has been hosting distinguished guests for almost 800 years - one of the most prominent being the Prince of Wales, who subsequently became George V of England. In honour of his visit in 1905, the Guinness family built a special dining room which still bears his name proudly to this day.'

Return to Dublin.
Stay at the historic and luxurious Shelbourne Hotel, overlooking St Stephens Green Dublin.

Newgrange, Co Meath
Newgrange is a 5,200 year old passage tomb located in the Boyne Valley. Built by stone age farmers, it is a passage measuring 21 yards leading into a chamber with 3 alcoves. The passage and chamber are alligned with the rising sun at the Winter Solstice. Newgrange is older than the Pyramids of Egypt.
Kylemore Abbey & Gardens , Connemara
Private tour of historic Kylemore Abbey. Tea with the nuns and wander their Victorian Gardens. Kylemore is home to a community of nuns of the Benedictine Order who came here in 1920 after their abbey in Ypres, Belgium was destroyed in World War 1. Settling at Kylemore, the Benedictine Community opened a world renowned boarding school for girls and began restoring the Abbey, Gothic Church and Victorian Walled Garden to their fomrer glory.
Ballywalter Park, Co Down
Ballywalter Estate, Co Down. Ballywalter Park is the family home of Lord and Lady Dunleath and it is one of Ireland's most important Historic Houses. The house was built in the Italian Palazzo style by Lord Dunleaths' great great great grandfather, Andrew Mulholland, to the designs of Charles (later Sir Charles ) Lanyon, one of Ireland's foremost architects. Ballywalter has been described as "Northern Irealnd's best kept secret" and as a "World Class Venue". Over the past 20 years they have undertaken a major progam of restoration work. Accommodation is limited in this magnificent home to 12 bedrooms. 2 Twin Rooms and 10 Double Rooms. All of the catering is provided by their own in house team under the supervision of Vibse (Lady Dunleath) who is a professional food historian. Her ethos is to use seasonal produce, sourced either from the Estate or from carefully selected local suppliers. Their shellfish comes from Ballywalter Harbor which is just half a mile away, whilst one of Ireland's largest fishing ports, Portavogie is but a ten minute drive and they get their fish there direct off the boats.
