Traditional Mince Pies

One of my favorite holiday treats. Traditional Mince Pies. Don't let the name fool you, these are not made with meat ! In medieval times these pies were made from meat but this recipe evolved over the years to become the sweet, fruity and spicy treats we know and love today. Made with melt in the mouth pastry, they are lovely to have on hand, when guests call. 


Pre heat oven to 425 degrees
Lightly grease a shallow cup cake pan, If it is too deep, they will not come out easily.
Cube your butter and place in refrigerator until needed along with your measured water
Measure out flour and whir this in a food processor with salt.
Add butter and pulse until it resembles meal.
Add water a teaspoon at a time.
Pulse again until the pastry begins to form a ball and the sides of the bowl are clean.
Lightly flour your surface and turn out dough.
Roll out dough.
You will need 2 fluted edge cookie cutters. 3" & 2.5" sizes.
Using your larger cookie cutter, cut out from dough and place gently in prepared pans.
Spoon in mince meat to each pie.
Cut out tops with smaller cookie cutter and using egg wash you can use this to help seal them.
prick each pie gently with a fork and lightly brush each top with egg wash.
Bake for approximately 20 minutes or until lightly golden.
Cool on a wire tray.
